Bayou Classic® Oyster Fritters
Golden, crispy, and full of flavor—these oyster fritters are perfect as an appetizer or a savory snack.
Ingredients
- 4 cups vegetable oil (for frying)
- 2 large eggs, slightly beaten
- 1 cup milk
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 2 teaspoons baking powder
- ½ teaspoon salt 1½ cups oysters, chopped
- ½ cup green onions, chopped
- Bayou Classic® 16-in Cast Iron Double-Handled Skillet
Directions
- Heat 1 to 2 inches of oil in a Bayou Classic® Skillet to 365°F.
- In a small bowl, whisk together the eggs and milk.
- In a separate bowl, combine the flour, cornmeal, baking powder, green onions, and salt. Mix well.
- Add the egg and milk mixture to the dry ingredients. Stir until smooth. Fold in the chopped oysters.
- Drop batter into the hot oil by spoonfuls (a cookie scoop works well). Cook in batches, turning occasionally, until golden brown on both sides.
- Remove fritters and drain on paper towels. Serve hot and enjoy!
