Bayou Classic® Oyster Fritters

Golden, crispy, and full of flavor—these oyster fritters are perfect as an appetizer or a savory snack.

Ingredients

  • 4 cups vegetable oil (for frying)
  • 2 large eggs, slightly beaten
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 teaspoons baking powder
  • ½ teaspoon salt 1½ cups oysters, chopped
  • ½ cup green onions, chopped
  • Bayou Classic® 16-in Cast Iron Double-Handled Skillet

Directions

  1. Heat 1 to 2 inches of oil in a Bayou Classic® Skillet to 365°F.
  2. In a small bowl, whisk together the eggs and milk.
  3. In a separate bowl, combine the flour, cornmeal, baking powder, green onions, and salt. Mix well.
  4. Add the egg and milk mixture to the dry ingredients. Stir until smooth. Fold in the chopped oysters.
  5. Drop batter into the hot oil by spoonfuls (a cookie scoop works well). Cook in batches, turning occasionally, until golden brown on both sides. 
  6. Remove fritters and drain on paper towels. Serve hot and enjoy!
